I can’t believe we’re so close to Christmas now, eep! I’m well and truly excited for December 25th now! You may have heard of or have seen the name Indigo Herbs on the blog a few times before, maybe you remember my awesome green vegan cookies? When they got in touch again to see if I’d like to create some more recipes, I knew that I just had to do get to the kitchen to get baking something festive! Full mum mode activated.
I decided that for my first recipe I wanted to attempt something I had never done before, you all know I like a challenge! So I decided I’d take on the challenge of… vegan doughnuts! Spoiler alert, it was a complete success and I’m actually super proud of myself for creating these delicious festive treats!
So what will you need?
For the Doughnuts:
150 g Plain Flour
2 Heaped tbsp Indigo Herbs Organic Raw Cacao Powder*
1 tsp Cinnamon
1 tsp Ground Ginger
1/4 tsp Nutmeg
1 + 1/2 tsp Baking Powder
1 tbsp Coconut Oil
290ml Unsweetened Soya Milk(Or any milk alternative)
Pinch of Salt
For the Doughnut Glaze:
60 g Vegan Butter
2 tbsp Unsweetened Soya Milk(Or any milk alternative)
2 tsp Vanilla Extract
Red Skittle’s or any other small red sweet that’s vegan friendly!
Green icing to make the leaves
The recipe will make 12 doughnuts using a 6 doughnut tray(twice)
Not only are all of these ingredients super accessible, but the method is super easy too! The only other thing you certainly need is a doughnut tray! I bought mine right here from Amazon for just over £10 but I think you can find them in some supermarkets too.
So to start, you’ll want to pre heat your oven to 180C. Place your banana and all of your wet ingredients into a blender(any will do, we have a nutribullet which works wonders, #notspon) and whizz it up until smooth! You can then add all of your dry ingredients either into the blender or in a separate bowl before mixing in the wet mixture you’ve now made. Carefully pour and separate your combined mixture into your doughnut tray and place in the center of your pre heated oven.
After 15 minutes, the tops of your doughnuts should be slightly crisp and ready to remove! But whilst they’re in the oven, you should make the glaze for the top of the doughnuts. To do so, you’ll want to combine all of your ingredients(minus the vanilla extract) into a pan on a low heat and stir until they are all combined. Take off the heat and add in your vanilla extract and allow to cool.
Once you have removed your doughnuts from the oven and allowed them to cool on a cooling rack(top tip, if you don’t have a fancy cooling rack you can use a clean rack from the grill/oven, boom genius), you can begin the decorating to process! I wanted these festive tasting treats to look festive too! So I decided to try and make them look like little Christmas puddings! To do so, I first dipped the top of the doughnuts into the glaze and then set back on the cooling rack before sprinkling some of your desiccated coconut on the top half of the doughnut. I then pressed a red skittle onto the top of each of the doughnuts for the “berries!”
For the leaves, I had this plan to make really lifelike holly leaves, but sadly, my knife cutting skills failed me so I just sort of made these little green strips which kind of work, right? I think they don’t look too bad realllllly!
Now all that’s left to do is tuck in and enjoy! These vegan doughnuts taste so so yummy and I think they look really cute! Let me know if you give this recipe a go! They’d be super easy to make 100% organic too, just by making sure that the flour and other dry ingredients you pick up in the supermarket are organic, which is so easily done now!
