Hands up if you love carbs! Hands up if you love bread! I am a carb fiend and I don’t think I can go a day without bread. Be that seeded bread or wholemeal or something a bit fancier like banana bread, I can’t get enough of it!
Nowadays, you don’t need to fork out on expensive “fancy” loaves, with Pinterest literally overflowing with simple, easy to follow recipes and things like bread makers being readily available, making your own bread has never been easier.
Today I wanted to share with you a banana bread recipe that I have recently tried and tested and can tell you is absolutely divine! I’ve always loved making bread, banana bread especially, but I decided that I wanted to make it a little more naughty and sweet, so I thought why not add some chocolate and some cherries to it? I was right to think that it would taste amazing because it does and what’s even better is that it’s 100% vegan and nut free!
Prep time: 10 minutes
Baking time: 45 minutes
Yields: 1 loaf
Pre heat your oven to 175C
3 large(or 4 small bananas)
180g of plain/all purpose flour
50g of soft brown sugar
55g of vegetable oil
1 + 1/2 teaspoons of baking powder
1/2 a teaspoon of bicarbonate of soda
50g of dark/vegan chocolate chips
100g of glace cherries
sprinkle of cinnamon
sprinkle of nutmeg
This recipe couldn’t be easier to make! First, simply mix the flour, sugar, baking powder, bicarbonate of soda, cinnamon and nutmeg together. Then take your bananas and either mash them up or pop them in a blender along with the oil before slowly adding to your dry ingredients.
Lastly, add in your chocolate and cherries or any other additional sweet treats you’d like!
You can then pour into your pre lined loaf tin and place a couple of slices of banana on top for decoration like I did, but of course this isn’t necessary for a delicious banana bread!
Place your loaf in the centre of your oven at 175C for around 45 minutes. You can check on your banana bread to see if it is ready by placing a knife or fork into it and ensuring it comes out clean(minus any melted chocolate that you might encounter). If your banana bread still needs a little more time, simply pop it back in the over for 5 minutes and then repeat the testing process until your knife/fork comes out clean.
